I began to experiment with sous vide cooking in 2011 by repurposing an old crock pot and a custom built temperature controller. In the years since then, there has been a quiet revolution in cooking with the popularization of sous vide circulators. The process involves vacuum sealing food in a specialized bag then cooking it in a water bath to an exact desired temperature. Once you have the vacuum sealer and the circulator, there are many additional applications to consider, especially ones involving your freezer. Food can be vacuum sealed for long term freezer storage. Cooked foods can be frozen in portions for a future meal. Frozen vacuum sealed food can be cooked or reheated right in the bag using sous vide. Enjoy "leftovers" months later that taste as good as when they were first cooked.
